Price of avocados got you down? Here’s my recipe for an equally green, summery, unctuous, and refreshing dip/spread — all at a fraction of the cost! You’re practically printing money when you make it. (I know what you’re thinking: I probably should have shared this before Cinco de Mayo. You’re right.)

RECIPE: AVOCADO-LESS “GUACAMOLE”

(Guacamole-Style Edamame and Green Pea Dip)

Yield: About 2 cups (475 grams)
Total time: 15 minutes

While you really can’t separate guacamole from avocado (after all, guacamole comes from the Nahuatl words ahuacatl (avocado) and molli (sauce or paste), this green dip is a pretty convincing alternative. Bay leaf and nutmeg, relatives of the avocado, do their best to evoke the missing fruit’s unique and subtle flavor, while olive oil (or even avocado oil) contributes the fat required for the expected guacamole mouthfeel. A major advantage to this dip (in addition to its cost): it doesn’t turn brown!
