FRENCH-STYLE GRATED CARROT SALAD

Dressed carottes râpées (grated carrots) salad is everywhere in France. Finding it there in a prepared food fridge is as easy as coming across, say, potato salad in the U.S. I spent the better part of two years in France in my twenties, and packaged carottes râpées from Monoprix was one of my budget meals of choice (among the others were man’ouché—Lebanese flatbread—with za’atar and tomato, or tinned tuna in tomato sauce). It always had a sweet, citrusy dressing with a hint of allium and mustard that struck my palate as more than the sum of its humble parts. I’ve kept it simple but applied some upgrades to the Monoprix version, so it now has even more parts of which to be more than the sum: greenness from fresh parsley, extra brightness from citrus zest, and nutty warmth from toasted almonds.
Makes 3 to 4 servings
