Café Café, which existed in Soho from around 1997 to 2013, was a constant for me in my late teens and early twenties, during which time I often—with under-zealous financial and overzealous weight-watching motivations—went for a liquid lunch, preferably something caffeinated. It was the Age of the Frappuccino, after all. Café Café’s pistachio version ticked all the boxes. And the version I’ve made below is not only a knockout flavor-wise; it’s also made with only wholesome plant-based ingredients! Enjoy.

PISTACHIO-COFFEE SMOOTHIE
It’s not often I write a recipe that takes just minutes to follow and produces a full-on joy-sparker, so when it happens, I want to shout it from the rooftops. Plug your ears, because I’m a huge fan of this cold coffee and pistachio drink. Its taste brings me back to Café Café in Soho, New York City, at the turn of the millennium and is every bit as indulgent as what I straw-sipped there, but my version is undoubtedly more satisfying to the body; it’s a simple blend of raw pistachios, dates, coffee, water/ice, and a dash of vanilla and salt.
